As autumn air turns into winter chill, it’s that wonderful festive time of year again—Thanksgiving! Besides gathering with loved ones and expressing gratitude, this is also a time to showcase the bounty of our gardens and delicious receipes. As an experienced gardener, I love bringing a touch of harvest to the Thanksgiving table. Let’s delve into some recommended recipes that highlight seasonal ingredients, while celebrating the hard work we put into gardening!


Herb-Infused Turkey

Nothing represents Thanksgiving more than a perfectly roasted turkey. You can elevate the taste of your bird with fresh herbs straight from your garden. Garden herbs like thyme, sage, and rosemary can add extra depth and texture to your turkey.


Ingredients:


A whole turkey

Garlic and lemon

Fresh herbs (sage, thyme, rosemary)


Method:


Preheat your oven, set the heat according to the turkey’s weight.

Mix softened butter with some finely chopped herbs, minced garlic, and lemon zest - for a rich herb butter. 

Rub this mixture under the skin of the turkey. Then stuff the cavity with remaining herbs and a halved lemon. Now, you have a turkey that’s juicy and aromatic, capturing the essence of your garden harvest.

 

Pumpkin Pie

Thanksgiving isn’t complete without pumpkin pie, and if you grow your own pumpkins, you will know just how rewarding it is to make your pie from scratch, with ingredients straight from your backyard. Let’s add a twist! Incorporate some spices and a touch of maple syrup to elevate this classic!


Ingredients:


Fresh pumpkin puree (sourced from your garden)

Cinnamon, nutmeg, and ginger

Maple syrup


Method:


Roast and puree your pumpkin. Add maple syrup, eggs, cream, and spices to the mix. 

Pour the mixture into a pie crust, and bake until it is set.

This pie will taste fantastic while capturing the spirit of the harvest season!


Roasted Root Vegetable Medley

One of the great things about the late seasons is the abundance of root vegetables. Beets, carrots, and parsnips thrive in cooler weather, making them perfect options for your Thanksgiving spread.


Ingredients:


Carrots (harvested from your garden)

Beets 

Parsnips 


Method:


Preheat your oven to 400°F (200°C).

Chop the vegetables into uniform pieces, and marinate in salt, olive oil, and your favorite herbs—such as rosemary and thyme.

Roast for about 30-40 minutes, until they turn golden and tender.

The result is a beautiful medley on the plate, showcasing the best seasonal flavors from your garden!


Green Bean Casserole with Garden Fresh Touches

Green beans are another seasonal favorite. Most people love the crunch and flavor of fresh beans compared to canned ones, and especially if you’ve grown them yourself. Making this casserole will highlight their freshness and great taste. 


Ingredients:


Fresh green beans

Onions (store-bought or homemade)

Mushrooms 



Method:


Blanch the green beans, then sauté them with garlic and mushrooms.

Add in some cream of mushroom soup, and top with your onions before baking. This dish is a homemade classic, and made even better with fresh garden veggies! 


Cranberry Sauce with a Twist

For a twist on the classic sauce, let’s incorporate some lesser-known garden gems:


Ingredients: 

Cranberries

Apple cider vinegar or maple syrup

Rose hips or elderberries from your garden


Rose hips can be foraged from your garden or locally. They will add a unique tartness and a vitamin boost to your favorite sauce.
